In my view, Modesto prepares the best Italian food in Asheville. Chef and owner Hector Diaz is an amazing gentleman with over 40 years of experience in the kitchen. He trained under some of the top chefs of New York before settling in Miami where his career took off. Fortunately for us, he discovered Asheville around 20 years ago and made a huge splash with his first restaurant Salsa on Patton. He also owns Bomba on Pack Square, a spectacular breakfast spot. Chef Diaz has an unbridled passion for cooking and this sets him apart from other restauranteurs many of whom start to back away from the kitchen once their restaurants become profitable. Hector puts the customer first, treats his employees very well, and does not at all seem to be in it for the money. He is obsessed with finding the best available ingredients and believes he has a calling from a higher power to serve his customers a high-quality plate of nourishing food. He spares no expense in food selections as most are local, seasonal and organic. Hector Diaz works tirelessly behind the stove every day. Most every dish is made from scratch daily including the house-made breads and desserts, hand-formed, artisan pizzas and fire-roasted specialties from the custom-made Italian wood-fire oven. As one would expect, Modesto also offers a nice selection of boutique Italian wine, showcasing varietals and cuvees from small, mindful producers. The appetizers, soups, salads, meats, fish, and plates of pasta are all exceptionally well prepared. Don’t look for Hector Diaz perched at the bar or cruising the floor schmoozing with guests. He is better than that. His butt is in the kitchen making magic happen. You gotta love it!
